Ingredients:
- 6 cups of low sodium chicken broth
- 4 chicken breast
- 1 green pepper
- 1/4 of a purple onion
- 1/2 cup of frozen peas
- 5 small -medium red potatoes ( can also use sweet potatoes)
- 4 carrots
- 1 1/2 Tbsp of garlic powder
- 1/8 tsp of cardamom
- 1/4 tsp of turmeric
- 2 bay leaves
Directions:
- Chop chicken into small cubes, set aside
- Chop all veg into small cubes or slices, set aside
- In your slow cooker add your broth and spices and mix ( except bay leaves)
- Add all of your ingredients and stir, place bay leaf on top
- If at home while cooking give it a stir here and there
- You can either put your cooker on high if you want done in 2-3 hours or let it simmer on low while you are at work for the day or over night
- Once done remove bay leaves
- Even make a double batch and freeze for a later time
Perfect hearty soup for a chilly evening or afternoon!
