Protein Lemon Poppyseed Muffins

Ingredients (dry):

  • 2 cups of almond meal flour

  • 1/4 cup of baking stevia

  • 1 scoop of Dynamis White Chocolate Browine Protein

  • 1/4 cup of poppyseeds

  • 2 Tsp of Baking powder

  • pinch of salt

Ingredients (wet):

  • 2 eggs 

  • 3/4 cup of not fat greek yogurt

  • 1/4 cup of olive oil 

  • 1/3 cup of lemon juice 

  • 1 Tbsp of lemon zest grated 

Directions:

  • Pre heat oven to 350, Grease your muffin tin or line with cups

  • Combine all dry ingredients in a large mixing bowl

  • In a separate bowl combine all wet ingredients 

  • Pour wet ingredients into the dry mixing bowl and fully combine

  • Spoon batter into muffin tin evenly between all 12

  • Cook in the oven for 15 minute ( be sure to keep and eye on them because of the protein they may cook faster. Stick a toothpick in the middle to find out) 

Once cooked take and let cool and enjoy! Great protein packed muffin with an awesome summer flavour!
