Right now I'm training for the WBFF Worlds Show on August 27th. Being on a caloric deficit for 15 weeks is a challenge without a doubt.

The biggest challenge though is not knowing how to make your foods taste delicious. I have a limited amount of calories to eat every day so I want to make sure my food tastes as delicious as possible.

There's just one problem -- I have a lactose intolerance (thanks DYNAMIS for helping me with this, REFUEL s6k doesn't bother me at all since it's lactose free) and I have a gluten intolerance, so bread is out of the question. BUT I LOVE PANCAKES!

I've cooked with Coconut Flour before and it's alright... but it makes your baking tastes like coconuts. And I want no-coconut pancakes.

I went out to Safeway the other day and picked up Gluten Free flour for the first time. The stuff is BOMB! Changed my life. Below is my new recipe. I hope you enjoy as much as I enjoyed eating it.

Low Fat Gluten Free Black Forest Protein Pancakes

Macros: 359 Calories, 2 Grams of Fat, 34 Grams of Protein, 55 Grams of Carbs

Grocery List

Ingredients for the Pancakes

  • 1/2 Scoop of DYNAMIS ReFUEL
  • 1/2 Cup of Egg Whites
  • 1/4 Cup of Blueberries
  • 5 Tablespoons of Gluten Free Flour
  • Unsweetened Chocolate Almond Milk (as needed)
  • 1/2 TSP Baking Powder
  • 1/4 Cup Unsweetened Chocolate Almond Milk

Ingredients for the "Peanut Butter" Spread

  • 2 Tablespoons of PB2
  • 1 Tablespoon of Unsweetened Chocolate Almond Milk

Instructions for Pancakes:

  1. Pre-Heat the skillet to Medium-High and spray with cooking spray
  2. Mix the Protein powder, Egg Whites, Blueberries, Almond Milk and Gluten Free flour all together in a large bowl
  3. Use a tablespoon to take mixture out of the bowl and place in the frying pan. Cook 2 pancakes at a time. Flip after 2-4 minutes

Instructions for Peanut Butter Spread

  1. Take 2 Tablespoons of PB2 and place in a small bowl
  2. Add 1 Tablespoon of Unsweetened Chocolate Almond Milk
  3. Mix together and will make a DELICIOUS peanut butter paste!

While all this is happening take 1/4 cup of Blueberries and put in the microwave for 30 seconds. These are going to go on top of your pancakes and peanut butter.

Once all of your pancakes are cooked, put them on the plate, spread the peanut butter evenly, and take the blueberries out and top it off.

BONUS! Add 0 Calorie Walden Farms Maple Syrup (or blueberry syrup) to really spice it up. Voila!! Low Fat Gluten Free Black Forest Chocolate Protein Pancakes.
