Power Breakfast Egg Muffin

Veggie egg muffin with a black bean quinoa base!

Base:

  • 1/4 cup of cooked qunioa
  • 1/2 cup of black beans
  • Pinch of salt and pepper
  • 1 tbsp of egg whites

Combine and mash all ingredients

Then in a grease muffin tin place a spoon full in each bottom and spread out to coat bottom of muffin tin.

Egg muffins:

1 cup of egg whites

  • 3 eggs
  • 3 strips of cooked turkey bacon
  • 1/2 cup of green pepper
  • 2 mini sweet peppers
  • 1 small yellow tomato
  • 1 cup of mixed power greens
  • 1/4 cup of purple onion
  • 1/4 cup of light feta
  • Pinch of salt and pepper

Pre heat oven to 350

Dice all ingredients into small pieces. Whisk in a large mixing bowl eggs and all ingredients. Take a small measuring cup and fill up each muffin tin equally. Place in oven and cook for 20 min or until done. So ovens cook slower or faster.

Let cool and enjoy with your fav sauce (organic salsa is amazing)
